Apple Cranberry Pie

Ingredients:

  • 1 cup fresh cranberries
  • 4 heaping cups peeled and thinly sliced sweet apple
  • ¼ cup maple syrup
  • ½ teaspoon ground cinnamon
  • 9-inch prepared vegan pastry crust, preferably whole grain
  • Prepared granola for topping (⅓ to ½ cup, or as desired)

Praline Pecan Pumpkin Pie

Ingredients:

  • 4 1/2 teaspoons agar agar flakes
  • 1/2 cup hot water
  • 1 1/2 cups raw pecans
  • 1 1/3 cups coconut sugar, divided
  • 1 1/4 cups canned full-fat coconut milk, divided
  • 2 tablespoons brown rice flour
  • 2 tablespoons vanilla, divided
  • 3/4 teaspoon salt, divided
  • 2 cups pumpkin purée
  • 1 teaspoon ground cinnamon, plus more for garnish
  • 1/2 teaspoon ginger powder
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 4 1/2 teaspoons kuzu root starch
  • 1/4 cup cold water

Sweet Potato Cardamom Pie

  • 1 large sweet potato, peeled and cut into 1-inch pieces
