7 kickass corn on the cob recipes for summer

Corn on the cob is one of the best treats in the summer, but it can get boring pretty fast. If you’re a corn on the cob lover and are looking for ways to kick up one of your favorite foods, try one of these seven amazing recipes.

Jalapeño lime grilled corn on the cob recipe

Ingredients:

  • 8 ears of fresh corn, husks completely removed
  • Non-stick cooking spray
  • Salt and pepper
  • 1/2 cup butter softened
  • 1 jalapeno pepper, seeded and minced
  • 1 small garlic clove, pressed
  • 1 tablespoon lime zest
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro

Start by preheating the grill to 350°-400°. Lightly coat corn with non-stick spray, then sprinkle with salt and pepper. Grill corn with lid covered for about 15 minutes. In the meantime, stir together the remaining ingredients. Remove corn from grill and cut into thirds. Serve with butter mixture.

Chili lime grilled corn on the cob recipe

Ingredients:

  • 4 tablespoons butter, softened
  • 1 teaspoon finely shredded lime zest
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt, plus more to taste
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon granulated garlic
  • 6 ears or corn

Start by combining the butter, lime zest, chili powder, pepper, salt and garlic in a small, resealable bag. Smash with fingers to combine. Chill until ready to use then bring to room temperature. Peel back husks from each ear without completely detaching from base of cob. Remove as much silk as possible and soak ears in water for up to an hour. Drain ears, open the husks, and dry the ears with paper towels. Spread ears evenly with butter mixture then fold husks back over the ears and tie in place using strips of husks or string. Corn can be chilled for up to 24 hours. Grill corn over indirect medium heat for about 20 minutes. Sprinkle with salt to taste.

Parmesan coated corn on the cob recipe

Ingredients:

  • 1/2 cup olive oil
  • 2 garlic cloves, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh Italian parsley leaves
  • 1/2 teaspoon salt
  • 6 ears yellow corn, husked then halved crosswise

Heat oil in a small, heavy skillet over medium heat. Add garlic and sauté until fragrant. Remove the skillet from heat and allow to cool. Reserve 2 tbsp.s of parmesan cheese and stir the rest into the garlic mixture with the parsley and salt. Boil corn in a large saucepan of salted water for about five minutes. Brush corn with cheese mixture and sprinkle with remaining cheese, then serve.

Sweet corn on the cob recipe          

Ingredients

  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 6 ears corn, remove silk and husks

Bring a large pot of water to a boil. Stir in sugar and lemon juice and allow sugar to dissolve. Add the corn, cover, turn off heat and let the corn cook in the water for about ten minutes.

Lemon garlic corn on the cob recipe

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, minced
  • 4 ears corn, husked
  • 1/3 cup water
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper

Heat oil and butter in a large skillet over medium heat. Add garlic and cook until fragrant but not browned. Add corn, water, lemon juice, salt, and pepper. Cover and allow to cook for five minutes, gently shaking pan to turn the cobs. Remove cover and continue cooking for another five minutes until most of the liquid has evaporated, about two to four minutes. Serve corn with lemon-garlic pan sauce.

Fresh herbs with salt and paper corn on the cob recipe

Ingredients

  • 4 ears corn
  • Butter-flavored cooking spray
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 20 to 24 sprigs of fresh basil, thyme, rosemary, dill weed, sage or marjoram

Heat oven to 450°. Husk and remove silk from corn. Place each of the ears of corn a piece of aluminum foil about 1 ft. by 1ft. Then spray the ears of corn on all sides with cooking spray and sprinkle with salt and pepper to your liking. Place five or six herb sprigs around each ear and seal foil. Place sealed corn cobs directly on oven rack then bake for 20 minutes until corn is tender.

Bacon wrapped corn on the cob recipe

Simply wrap each ear of corn in two to three strips of bacon and grill until charred. This can be wrapped in foil if you are worried about a grease fire.
