Creative Jelly Bean Recipes For National Jelly Bean Day

Jelly Bean Fudge
Ingredients
- 1 jar (7oz) marshmallow cream
- 1 bag (11oz) white chocolate morsels
- 2 cups granulated sugar
- ¾ cup heavy cream
- ¾ cup unsalted butter
- Pinch of salt
- 1 ½ cups jelly beans (spring mix)
- 2 cups jelly beans, for garnish
- 1 tbsp green sanding sugar
Directions
- Prepare a 9-inch springform pan by lining it with foil. Wrap foil around an empty fruit or vegetable can. Place in center of springform pan and set aside.
- In a large mixing bowl, add the marshmallow cream and white chocolate morsels. Set aside.
- In a large saucepan, add sugar, heavy cream, unsalted butter and salt. Bring to a boil over medium high heat, stirring frequently. Once boiling, continue to boil for a full 4 minutes, stirring constantly. Remove from heat and pour over marshmallow mixture. Using an electric mixer, blend for about one minutes, until morsels are melted and mixture is smooth.
- Fold in the 1 1/2 cups jelly beans, until combined. Pour into prepared pan. Sprinkle with green sanding sugar. Use some of the additional jelly beans to decorate the top of the fudge, if desired. Once decorated, place fudge, uncovered, into the refrigerator for 4 hours, or overnight.
- When ready to serve, remove fudge from springform pan by releasing the latch. Unwrap the foil and place on a serving plate. You may need to use a butter knife to gently cut and remove the center can, wiggling it out gently. Fill center of ring with remaining jelly beans.
Jelly Bean Sugar Cookies
Ingredients
- 1 white cake mix
- 2 eggs
- ⅓ cup of vegetable or canola oil
- 1 (14oz) bag of jelly beans
- sanding sugar sprinkles (various colors)
Directions
- Preheat oven to 375 degrees and line two cookie sheets with parchment paper.
- Stir together cake mix, eggs, and oil until well combined.
- Scoop cookie dough with a 1 ounce ice cream scoop; roll into a ball and press three of the same flavor jelly beans into the dough.
- Roll back into a ball, roll the cookie dough ball in same colored sugar as the jelly beans inside the cookie dough. Do not flatten the dough; retain the ball shape.
- Place on prepared cookie sheets.
- Bake 10-12 minutes, or until the cookie bottoms becomes lightly brown.
- Slide the cookie still on the parchment paper either onto a wire cooling rack or onto the counter to cool completely.
Jelly Bean Martini
Ingredients
- 3 oz (6 tbsp) cotton candy-flavored vodka
- ¼ cup red and pink jelly beans
- Ice
- 2 oz (1/4 cup) orange-flavored liqueur (or your favorite flavor)
Garnish
- 6 red or pink jelly beans
- 2 lemon slices
Directions
- One hour before serving, place 2 martini glasses in refrigerator. In small bowl, pour vodka over 1/4 cup jelly beans. Cover; refrigerate.
- At serving time, fill martini shaker with ice. Shake bowl with cold vodka and jelly beans. Strain vodka into shaker; discard jelly beans. Add liqueur; shake well. Strain into 2 chilled martini glasses. To garnish, add 3 jelly beans to bottom of each glass. Garnish each with lemon slice. Serve immediately.
