Fatty Appetizers Turned Healthy For Super Bowl Sunday

The Super Bowl = is upon us—football, parties and endless trash talk. Why not pair that smack talking with some lip-smacking, finger-licking good appetizers? These recipes are perfect for your upcoming tailgate party or for watching in the comfort of your home. But the biggest secret? These recipes are healthy. Your guests will never have to know.

Buffalo Cauliflower Bites

Ingredients:

  • 1 medium cauliflower, cut into bite-sized pieces
  • ½ cup of flour
  • ½ cup of water
  • 1 teaspoon of garlic powder
  • ½ teaspoon of salt
  • ¼ teaspoon of black pepper
  • 2 Tablespoons of melted butter
  • ⅔ cup of Buffalo hot sauce

Directions:

  1. Preheat oven to 450 degrees, spray a large cookie sheet with cooking spray and set aside.
  2. In a large bowl, mix together flour, water, garlic powder, salt and pepper. Add cauliflower florets and toss to coat.
  3. Spread evenly onto cookie sheet and place in the oven. Bake for 15 minutes, flipping once. Remove from the oven.
  4. In a separate bowl, stir together melted butter and buffalo sauce. Add baked cauliflower and toss to coat.
  5. Spread evenly onto cookie sheet. Place back in the oven and bake for 25-30 minutes or until crispy, flipping once.
  6. Remove from oven and let sit 10 minutes before serving.

Makes (roughly) four cups of bites, or four servings. Serve with your favorite dipping sauce.

Skinny Taco Dip

Ingredients:

  • 8 oz of Philadelphia cream cheese, reduced fat
  • 8 oz of sour cream, reduced fat
  • 16 oz jar of mild salsa
  • ½ packet of taco seasoning
  • 2 cups of iceberg lettuce, shredded
  • 2 large tomatoes, diced
  • 1 cup of shredded cheddar cheese, reduced fat
  • 2.25 oz of sliced black olives

Directions:

  1. In a large bowl, combine cream cheese, sour cream, salsa and taco seasoning and mix well with an electric mixer.
  2. Spread on the bottom of a large shallow glass dish.
  3. Top with shredded lettuce, tomatoes, shredded cheese and black olives.
  4. Chill in the fridge until game time.
  5. Serve with baked tortilla chips.

Be creative and add your own toppings, such as jalapenos or a side of heart-healthy guacamole.

Ingredients:

  • 8 oz of graham crackers (one sleeve)
  • 1 banana
  • 1 Tablespoon of honey
  • 6 oz of vanilla Greek yogurt
  • 2 cups of light cool whip
  • 2 Tablespoons of shredded coconut
  • Fruit of your choice for toppings—strawberries, bananas, grapes, kiwi, pineapple

Directions:

  1. Place grahams in a large bowl. Crush using your fingers or a cup. You could use a blender or food processor, but don’t crush into a dirt consistency.
  2. Add the banana to the crushed graham crackers. Combine to form a dough-like consistency.
  3. Roll out the dough in a circle. Fold the outer edges in and pinch the sides to form a crust.
  4. Drizzle honey over crust and spread it with a spoon. Place crust on greased cookie sheet.
  5. Bake at 350 degrees for approximately 20 minutes. Cool completely before removing from cookie sheet.
  6. Meanwhile, in a bowl, combine the cool whip and Greek yogurt. Let thicken in fridge for about 20 minutes.
  7. After the crust has cooled, spread the mixture over the crust evenly. Sprinkle with shredded coconut. Add your fruit, making sure they are sliced or diced into bite-size pieces, depending on the fruit you use.
  8. Chill in the fridge until game time.
